Lemon and Garlic Chicken with BIG Mix Little Leaves

This recipe is so simple, full of flavour and moisture! And what’s more it’s low in fat! Delicious served on a bed of fresh & naked BIG Mix Little Leaves.

Lemon and Garlic Chicken with BIG Mix Little Leaves Recipe

Ingredients

  • 2 skinless chicken breasts approx 125g each
    4 cloves garlic peeled and sliced
    1 2.5 cm piece whole ginger sliced
    Juice of 1 lemon (2 slices reserved for garnish)
    1 tablespoon fresh parsley
    Freshly ground black pepper
    1 teaspoon chicken stock powder

     

Method

  1. Place the chicken breasts in a shallow serving dish or bowl and add all the other ingredients. Mix well and cover. Leave to marinate overnight in the fridge.
  2. Sear the chicken breasts on a hot BBQ, then move to the side or turn down the temperature on the BBQ and leave to cook for 6-8 minutes, turning and basting with the marinade.
  3. The chicken will be cooked when it feels firm to the touch.
  4. Garnish with the lemon slices and serve with a bag of your favourite mixed little leaves.
